    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a paper towel. Carefully add a batch of the potatoes to the hot oil and fry for about 5-7 minutes, or until they are golden brown and crispy. Do not overcrowd the pot.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and place them on paper towels to drain excess oil. While they are still hot, sprinkle with salt and black pepper to taste.

    Serve the crispy fries hot with ketchup on the side.
