    Prepare the Clams

    Rinse the fresh clams under cold water to remove any sand or grit. If using whole clams, shuck them and discard the shells, keeping only the meat.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the milk and eggs until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises, it's ready.

    Fry the Clams

    Dip the clam meat into the batter, allowing excess to drip off. Carefully place the battered clams into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried clams from the oil and transfer them to a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges on the side.
