Marinate the Chicken
In a large bowl, pour the buttermilk over the chicken pieces. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating
In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat the Chicken
Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, ensuring each piece is thoroughly coated.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 12-15 minutes per side, or until golden brown and cooked through.

Remove the fried chicken and place on a paper towel-lined plate to drain excess oil. Serve hot with your choice of sides.
