Prepare the Egg Mixture
In a large bowl, beat the eggs and mix in the soy sauce, cornstarch, water, salt, and black pepper until well combined.

Add Vegetables and Meat
Stir in the chopped green onions, bell pepper, mushrooms, carrots, and your choice of cooked meat until evenly distributed.

Cook the Omelets
Heat a tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour in a portion of the egg mixture (about 1/2 cup) and cook until the edges start to firm up, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.

Serve
Serve hot with additional soy sauce or your favorite dipping sauce.
