    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Add the unsalted butter and mix until it resembles coarse crumbs. Gradually add water and knead until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a pan, heat the oil over medium heat. Add the chopped onion and sauté until translucent. Add the boiled and mashed potatoes, green peas, curry powder, turmeric powder, and salt. Mix well and cook for 5 minutes. Remove from heat and let it cool.

    Assemble the Curry Puffs

    Divide the rested dough into equal portions and roll each portion into a circle. Place a spoonful of the filling in the center, fold the dough over to form a half-moon shape, and seal the edges by pressing with a fork.

    Fry the Curry Puffs

    Heat oil in a deep frying pan over medium heat. Fry the curry puffs in batches until golden brown and crispy. Drain on paper towels.
