Chimichanga Preparation

Prepare the Filling
In a large bowl, mix together the shredded chicken or beef, refried beans, shredded cheese, chopped onions, chopped bell peppers, cumin, chili powder, and salt until well combined.

Fill the Tortillas
Lay one large flour tortilla on a flat surface. Spoon about 1/4 of the filling mixture into the center of the tortilla. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chimichangas
Carefully place the filled chimichangas into the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes on each side. Use tongs to turn them as needed.

Drain and Serve
Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with sour cream, guacamole, and salsa.
