Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Let it cool to room temperature.

Assemble the Roll
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Place the grilled eel, cucumber strips, and avocado slices in a line across the center of the rice.

Roll the Sushi
Using the sushi mat, lift the edge closest to you and roll it over the fillings, pressing gently to form a tight roll. Continue rolling until the entire sheet is used. Seal the edge with a little water.

Cut the Roll
Using a sharp knife, wet it and slice the roll into 6-8 pieces. To create the caterpillar effect, place additional avocado slices on top of the roll, overlapping them slightly.

Serve
Sprinkle sesame seeds over the top and serve the sushi with soy sauce and wasabi on the side.
