Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
In a mixing bowl, combine ricotta, mozzarella, parmesan, pepperoni, bell pepper, olives, Italian seasoning, salt, and pepper. Mix until well combined.

Assemble the Calzones
Preheat your oven to 425°F (220°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter. Place a portion of filling on one half of the dough, fold over, and seal the edges by crimping with a fork.

Bake
Place the calzones on a baking sheet lined with parchment paper. Cut a small slit in the top of each calzone to allow steam to escape. Bake for 20-25 minutes or until golden brown.

Remove from the oven and let cool slightly before serving. Enjoy with marinara sauce for dipping!
