Method
Schnitzel Preparation
Prepare the Schnitzel
Flatten the pork or chicken cutlets to about 1/4 inch thickness. Season with salt and pepper. Dredge in flour, dip in beaten eggs, then coat with breadcrumbs.
Cook the Schnitzel
In a large skillet, heat vegetable oil over medium-high heat. Fry the schnitzels for about 3-4 minutes on each side or until golden brown. Drain on paper towels.

Make the Gravy
In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add mixed mushrooms and cook until tender. Pour in broth, and simmer for 5 minutes. Stir in heavy cream and thyme, and season with salt and pepper. Cook until thickened.
Sweet Potato Spaetzle Preparation
Prepare the Spaetzle
In a bowl, mix cooked sweet potatoes, flour, eggs, salt, and nutmeg until smooth. Bring a pot of salted water to a boil. Use a spaetzle maker or a colander to drop the batter into the water. Cook until they float, about 2-3 minutes. Drain and toss with butter.
Duck Fat Fries Preparation
Cook the Fries
In a large pot, heat duck fat to 350°F (175°C). Carefully fry the cut fries in batches until golden and crispy, about 4-5 minutes. Drain on paper towels and season with salt.
