Preparation
Activate Yeast
In a large mixing bowl, combine warm water, active dry yeast, and granulated sugar. Stir gently and let it sit for about 5 minutes until it becomes frothy.
Make the Dough
Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.
Let it Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
Shape the Pretzels
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.
Baking Soda Bath
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Carefully place each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.
Cool and Serve
Allow the pretzels to cool for a few minutes before serving. Enjoy warm!
