Prepare the Pork
Slice the pork loin into 1/2 inch thick pieces. Place each piece between two sheets of plastic wrap and pound with a meat mallet until about 1/4 inch thick.
Set Up Breading Station
In three separate shallow dishes, place the flour seasoned with salt and pepper in the first, beaten eggs in the second, and breadcrumbs in the third.
Bread the Pork
Dredge each pork piece in flour, shaking off excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until shimmering.
Fry the Schnitzels
Carefully add the breaded pork pieces to the hot oil, frying in batches if necessary. Cook for about 3-4 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwiches
On each slice of German rye bread, spread house mustard, place a pork schnitzel, and top with a slice of smoked Gouda. Add another slice of bread to create a sandwich.
Serve
Serve the sandwiches warm and enjoy!
