Preparation Steps
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet or rolling pin. This will help them cook evenly.
Set Up Breading Station
Set up a breading station by placing flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with salt and pepper in a third dish.
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip in the beaten eggs, then coat with breadcrumbs, pressing to adhere.
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken breasts for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to paper towels to drain excess oil.
Assemble the Sandwich
On each bun, layer lettuce, a slice of tomato, a piece of fried chicken, and two slices of smoked gouda cheese. Add spicy mayo on top and close the sandwich.

Serve the chicken schnitzel sandwiches warm with your favorite side.
