Prepare the Ingredients

Wash and dice the potatoes, onion, and bell pepper into small, even pieces.

Cook the Potatoes

In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes until they start to soften, stirring occasionally.

Add Onions and Peppers

Add the diced onion and bell pepper to the skillet with the potatoes. Cook for another 5-7 minutes until the vegetables are tender.

Add Optional Ingredients

If using, add the breakfast sausage or fauxrizo to the skillet. Cook until heated through and slightly browned.

Add Cheese

Sprinkle the white cheddar cheese over the hash and cover the skillet. Let it cook for an additional 2-3 minutes until the cheese melts.

Cook the Eggs

In a separate pan, cook the eggs over easy. Once cooked, place them on top of the hash.

Serve the breakfast hash hot, topped with the over-easy eggs. Enjoy!
