Prepare filling
Place ground turkey in a mixing bowl. Add finely chopped green onion, grated ginger, minced garlic, soy sauce, sesame oil, Shaoxing wine (if using), salt, and white pepper. Add finely diced water chestnuts if using. Mix with a spoon or your hand until combined and slightly sticky (about 1–2 minutes). Taste a tiny pinch by cooking briefly if desired and adjust seasoning.
Prepare egg wash
Crack the egg into a small bowl and lightly beat it. This will be used to seal the wonton wrappers.
Assemble wontons
Work on a lightly floured or clean counter. Lay one wonton wrapper flat. Place about 1 heaping tablespoon (approximately 18–20 g) of filling in the center of each wrapper — adjust slightly so you get six even wontons. Moisten the wrapper edges with a fingertip dipped into the beaten egg. Fold the wrapper over the filling to form a triangle (press edges to seal) or bring opposite corners together to form a traditional purse shape, ensuring no air pockets remain. Press firmly to seal. Repeat until you have six wontons. Lightly brush the bottom of each wonton with neutral oil to prevent sticking to the steamer basket if desired.
Steaming & finishing
Prepare the steamer: Pour the water into the steamer pot or wok and bring to a steady simmer over medium-high heat. Arrange a steamer liner (parchment with holes, cabbage leaves, or lightly oiled perforated steaming tray) in the steamer basket to prevent sticking.
Steam the wontons: Place the six assembled wontons in a single layer in the steamer, leaving space between them so they don't touch. Cover and steam over simmering water for 8–10 minutes, or until the filling reaches 74°C (165°F) and the wrappers become translucent and tender. If using a bamboo steamer, check occasionally to ensure water hasn't boiled dry.
Finish and plate: Carefully remove the steamer lid away from your face to avoid hot steam. Transfer the steamed wontons to a serving plate. Garnish with cilantro if using. Serve immediately with the lo mein-style dipping sauce on the side.
Lo mein-style dipping sauce
Mix sauce: In a small bowl, combine soy sauce, dark soy (if using), oyster sauce, rice vinegar, sugar, sesame oil, minced garlic, minced ginger, and sliced scallion. Add chili oil or red pepper flakes if you want heat. Stir well; if the sauce is too salty or thick, add 1 tablespoon warm water to dilute and blend flavors. Taste and adjust—add more sugar for sweetness, vinegar for tang, or soy for saltiness.
Serve: Transfer the sauce to a small dipping bowl. Place beside the plated steamed wontons. Encourage diners to dip each wonton into the sauce before eating.
