Prepare strawberry puree
Place the hulled strawberries in a small bowl or jar. Mash them thoroughly with a fork or small muddler until mostly smooth but still slightly textured (about 20–30 seconds). If you prefer a perfectly smooth liquid, pulse 2–3 times in a small blender or use an immersion blender, then strain through a fine mesh sieve to remove seeds. You should end up with about 1–2 tablespoons of strawberry juice/puree.
Combine flavor elements
Add the 1 teaspoon fresh lemon juice to the strawberry puree and stir to combine. If you want a touch of sweetness to mimic a commercial 'no-sugar' but slightly sweet profile, add 1–2 drops of liquid stevia or a tiny pinch of erythritol and mix; taste and adjust one drop at a time (optional).
Assemble the drink
Place 3 ice cubes (optional) into a 12 oz glass or serve directly in a chilled 12 oz can-style container. Pour the 12 oz of chilled sparkling water over the ice. Spoon or gently pour the strawberry-lemon mixture into the sparkling water. Do not vigorously stir — gently swirl once or twice to distribute the strawberry flavor while preserving carbonation.
Garnish and serve
Float a thin strawberry slice on the surface and add a small mint sprig if using. Serve immediately to enjoy maximum fizziness. If storing, keep the strawberry puree separately in the fridge and combine with sparkling water just before serving to maintain carbonation.
