Chill water

Ensure the carbonated water is thoroughly chilled (ideally 38–45°F / 3–7°C). Use a chilled can or bottle of plain sparkling water or carbonate filtered water to approximately 3–4 volumes CO2 if using a home carbonator. Measure 12 fl oz into a chilled, clean can or glass bottle if replicating can serving; if serving immediately, pour into a chilled glass.

Citrus Flavoring

Combine the fresh lemon juice and fresh lime juice in a small bowl. Stir in the lemon and lime oil (one drop each). If using a commercial lemon-lime flavor concentrate, add 1/4 tsp. Mix thoroughly so the oils/dispersed concentrate emulsify slightly into the juices.

Taste the mixture for intensity. The goal is a very light, bright citrus note—similar to a can that is subtle and not pulpy. If the flavor is too weak, add the concentrate in 1/8 tsp increments or another drop of citrus oil, but do not overdo oils as they become soapy.

If you wish to strain out any pulp for a clear canned appearance, pass the mixture through a fine mesh sieve or coffee filter into a small container.

Acidity & Balance

Dissolve the citric acid and sodium citrate (if using) in about 1 teaspoon of warm filtered water to ensure even distribution. Stir until fully dissolved.

Add the dissolved acids to the citrus mixture and stir to combine. This increases brightness and preserves the sharp, soda-like acidity that mimics Waterloo's profile. Taste and adjust: typical commercial cans are quite low in total acidity but bright; if you want slightly more tang, add up to 1/8 tsp more citric acid.

Assemble & Finish

Slowly add the citrus-acid mixture to the chilled carbonated water. Pour down the side of the glass or can to minimize CO2 loss. Stir once gently with a long spoon—just one or two slow turns to combine; avoid vigorous stirring to keep fizz.

Give the beverage a brief taste. The profile should be clean, bright lemon-lime with no detectable sweetness, sodium, or calories. If the drink tastes slightly flat, gently tilt and pour between two chilled vessels once to refresh carbonation.

If serving in a glass, add ice cubes and a thin lemon and lime slice for presentation. If bottling/canning for later, minimize headspace and chill immediately.

Serve immediately. Store any leftover in a sealed bottle in the refrigerator and consume within 24 hours for best carbonation and flavor.
