Prepare seasoning
In a small bowl, whisk together the sesame oil, soy sauce, sugar, and a pinch of the sea salt until the sugar dissolves. Add the toasted sesame seeds and crushed red pepper flakes (if using). This creates a thin, well-emulsified seasoning for brushing.
Trim and separate sheets
If using full-size nori sheets, use clean kitchen scissors or a knife to cut each sheet into 2–4 snack-size pieces (common is 6 strips per sheet). Separating sheets into the size you want to serve makes handling and baking easier.
Lightly oil nori
Lay the nori pieces flat on a baking sheet lined with parchment or a silicone mat. Lightly brush each side of the nori with the neutral oil (about 1/4 teaspoon per piece) or use a very small amount of the sesame oil mixture. The light oil helps seasoning adhere and improves crisping.
Brush seasoning
Using a pastry brush or the back of a spoon, very lightly brush one side of each nori piece with the sesame-soy seasoning. Do not soak; aim for a thin, even layer. If you prefer less salt, brush only one side.
Optional sprinkle
Sprinkle ground toasted sesame or furikake lightly over the brushed side for extra flavor and texture. Use about 1/4 teaspoon per few pieces; do not overload to avoid sogginess.
Bake or toast
Preheat the oven to 300°F (150°C). Place the baking sheet with nori in the oven on the middle rack and bake for 6–10 minutes, checking at 6 minutes. Nori should become crisp but not burned; smaller pieces will crisp faster. Alternatively, toast over a gas flame or in a dry skillet over medium-low heat for 15–40 seconds per side, watching carefully to avoid burning.
Storage
Once fully cooled, store the seaweed snacks in an airtight container or resealable bag with a small packet of silica or a paper towel to absorb moisture. Consume within 5–7 days for best crispness.
Optional Add-ins & Garnish
Add bonito or extra seasoning
If using bonito flakes or extra furikake, sprinkle a small pinch onto each sheet immediately after brushing and before baking so it adheres. Be cautious: flakes can brown quickly in the oven, so use sparingly or add after baking for visual effect.
Make smaller snack bites
For bite-sized pieces, cut the nori into 1–2 inch squares before seasoning. Reduce oven time by 1–2 minutes and check crispness earlier.
