Prepare filling
In a medium bowl, flake the imitation crab meat (or chopped fresh crab) into small pieces. Add the softened cream cheese and mash together with a fork until evenly combined but still slightly chunky — this helps create a light texture.
Stir in the sliced green onions, chopped cilantro, lime zest, lime juice, soy sauce, sesame oil and toasted sesame seeds (if using). Season with a pinch of salt and pepper. Taste and adjust: add a little more lime juice or soy sauce if you prefer brighter or saltier flavor. Chill the mixture for 15–20 minutes to firm slightly, which helps with assembly.

Assemble Rangún
Set up an assembly station: wonton wrappers stacked, a small bowl of cold water for sealing, and the chilled crab filling. Lightly dust your hands with cornstarch to prevent sticking. Place 1 heaping teaspoon (about 12–15 g) of filling in the center of a wonton wrapper. Beat the edges of the wrapper lightly with the cold water using your fingertip.
Fold the wrapper into a triangle by bringing two opposite corners together and pressing out any air. For the classic purse shape, bring the two remaining points together and pinch to seal, leaving a small pleat if desired. Wipe any excess filling from edges to ensure a tight seal. Repeat to make 6 pieces (you will use 6 wrappers); keep finished rangún covered with a damp towel to prevent drying.
Coating & Frying
Heat oil
Pour vegetable oil into a heavy-bottomed skillet or deep fryer to a depth of about 1.5–2 inches (enough to fully submerge the rangún). Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wrapper — it should sizzle and rise steadily without browning too fast.
Just before frying, very lightly dust each rangún with cornstarch — this creates an extra-crispy barrier that helps the wrapper blister and stay light. Shake off excess cornstarch.
Fry in small batches (2–3 at a time) so oil temperature remains steady. Gently lower the rangún into the oil with a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning once, until golden brown and crisp. Remove and drain on a wire rack or paper towels. Keep warm in a 200°F (95°C) oven while you finish remaining pieces.
Sweet Chili Dipping Sauce & Finish
Sauce & serve
Pour the sweet chili sauce into a small serving bowl. Serve the six Crab Rangún hot with the sweet chili sauce on the side, lime wedges for squeezing over, and garnish with microgreens or chives. The lime brightens the filling and balances the sweet chili.
Recommended plating: place three pieces on each side of a small bowl of sauce, garnish lightly with additional lime zest and a sprinkle of sesame seeds if desired. Serve immediately for the crispiest texture.
