Method

Preparing the Potatoes

    Wash and Prepare Potatoes

    Wash the russet potatoes thoroughly under cold water to remove any dirt. Pat them dry with a towel.

    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Prick each potato several times with a fork. Rub them with olive oil and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for about 45-60 minutes, or until fork-tender.

    Cool and Cut Potatoes

    Once baked, remove the potatoes from the oven and allow them to cool for about 10-15 minutes. Carefully cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

Assembling and Baking the Potato Skins

    Brush the inside and outside of the potato halves with olive oil and season with additional salt and pepper if desired.

    Sprinkle shredded cheddar cheese and crumbled bacon into each potato half.

    Place the filled potato skins on a baking sheet, cut side up. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
