Prepare the Peach
Wash the fresh peach thoroughly. Cut it in half, remove the pit, and slice it into thin wedges. Set aside.

Mix the Cocktail
In a cocktail shaker, combine the Stateside Vodka, sliced peach wedges, Herbes de Provence, simple syrup, and bitters.

Add Ice
Fill the cocktail shaker with ice cubes. Cover the shaker and shake vigorously for about 15-20 seconds until well chilled.

Strain the mixture into a chilled cocktail glass or a rocks glass filled with fresh ice.
