Method

Preparation

  1. 1

    Prepare the Vegetables

Peel and dice the carrots and onion. Chop the celery stalks and mince the garlic cloves.

  2. 2

    Rinse the Split Peas

Thoroughly rinse the split peas under cold water, removing any debris or stones.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

  2. 4

    Add Garlic

Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 5

    Combine Ingredients

Add the rinsed split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

  4. 6

    Simmer the Soup

Bring the mixture to a boil, then reduce heat to low. Cover and let the soup simmer for about 45-60 minutes, or until the split peas are tender.

  5. 7

    Blend (Optional)

For a smoother texture, remove the bay leaves and blend the soup with an immersion blender until desired consistency is reached.

  6. 8

    Finish with Lemon Juice

Stir in 1 tablespoon of lemon juice before serving for added brightness.
