Cookie Base

Method

  1. 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

  2. 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.

  3. 3

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

  5. 5

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

  6. 6

Gently fold in the chocolate chips until evenly distributed throughout the dough.

  7. 7

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are golden.

  8. 8

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Chocolate Coating

  1. 9

    Melt the Chocolate

In a microwave-safe bowl, combine the semi-sweet chocolate and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.

  2. 10

    Dip the Cookies

Once the cookies are completely cooled, dip each cookie into the melted chocolate, ensuring they are fully coated. Allow excess chocolate to drip off.

  3. 11

    Garnish the Cookies

Place the dipped cookies on a wire rack or parchment paper. Immediately sprinkle with your choice of sprinkles or crushed nuts while the chocolate is still wet.

  4. 12

    Set the Chocolate

Allow the chocolate to set at room temperature or refrigerate for faster setting, about 15-20 minutes.
