Beer-Battered Pollock

Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Pollock
Dip each pollock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Malt Vinegar Aioli

Mix the Ingredients
In a small bowl, combine the mayonnaise, malt vinegar, minced garlic, and Dijon mustard. Mix well until smooth.

Add salt and black pepper to taste. Adjust seasoning as desired and set aside.
Fries

Prepare the Potatoes
Peel the russet potatoes and cut them into sticks or wedges, about 1/4 inch thick.

Fry the Potatoes
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potato sticks in batches for 4-5 minutes until golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.
