Meatballs

Method

Meatballs Preparation

  1. 1

    Make the Meatball Mixture

In a large bowl, combine ground beef, ground pork, grated Parmesan cheese, breadcrumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until all ingredients are well combined.

  2. 2

    Form Meatballs

Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Cooking the Meatballs

  1. 3

    Bake the Meatballs

Preheat your oven to 400°F (200°C). Bake the meatballs for 20 minutes or until they are browned and cooked through.

Soup Preparation

  1. 4

    Sauté Vegetables

In a large pot, heat olive oil over medium heat. Add diced carrots, celery, and onion. Sauté for about 5-7 minutes until vegetables are tender.

  2. 5

    Add Garlic

Add minced garlic and sauté for an additional minute until fragrant.

  3. 6

    Add Broth and Seasonings

Pour in chicken broth and bring to a boil. Add salt, black pepper, and dried oregano.

  4. 7

    Add Spinach

Once the broth is boiling, reduce the heat and stir in the chopped spinach. Let it simmer for about 5 minutes.

  5. 8

    Add Meatballs

Carefully add the baked meatballs to the soup and let it simmer for another 5-10 minutes to heat through.

Serving

  1. 9

    Serve the Soup

Ladle the soup into bowls and sprinkle with additional grated Parmesan cheese before serving.
