Preparing the Eggs

    Boil the Eggs

    Place the large eggs in a pot and cover them with cold water. Make sure there's about an inch of water above the eggs. Turn the heat to high and bring the water to a boil.

    Cook the Eggs

    Once the water reaches a rolling boil, cover the pot with a lid and remove it from heat. Let the eggs sit in the hot water for 9-12 minutes, depending on how firm you prefer the yolks.

    Cool the Eggs

    After the cooking time is up, carefully drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for about 5-10 minutes.

Making the Filling

    Peel the Eggs

    Once the eggs are cool, gently tap them on a hard surface to crack the shell, then peel the eggs under running water for easier shell removal.

    Slice the Eggs

    Cut each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl. Place the egg whites on a serving platter.

    In the bowl with the yolks, add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika. Mash the yolks and mix until smooth and creamy.
