Method

Preparation

  1. 1

    Clean the Mussels

In a large bowl, rinse the mussels under cold water to remove any sand or debris. Scrub the shells with a brush and remove the beards (the fibrous strands attached to the shells). Discard any mussels that are open and do not close when tapped.

Cooking the Broth

  1. 2

    Sauté the Aromatics

In a large pot or Dutch oven, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and finely chopped shallots. Sauté for about 3-4 minutes, or until they are translucent and fragrant.

  2. 3

    Add Wine and Seasonings

Pour in the white wine and bring it to a gentle boil. Add the black pepper and salt to taste. Allow the mixture to simmer for about 5 minutes to let the alcohol evaporate.

Cooking Mussels

  1. 4

    Add Mussels

Carefully add the cleaned mussels to the pot. Cover with a lid and steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

  2. 5

    Finish the Broth

Once the mussels are cooked, stir in the remaining 2 tablespoons of butter and chopped fresh parsley. Mix well and adjust seasoning if necessary.

Serving

  1. 6

    Plate the Mussels

Serve the mussels in bowls, ladling the broth over them. Garnish with additional parsley if desired. Serve with crusty bread for dipping.
