Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Crust Mixture

In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon. Mix until well combined.

  3. 3

    Shape the Crust

Line a muffin tin with paper liners. Press about 2 tablespoons of the crust mixture into the bottom of each liner, ensuring it's compact and even.

  4. 4

    Bake the Crust

Bake in the preheated oven for 10 minutes. Remove and let cool.

Filling Preparation

  1. 5

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Add granulated sugar, sour cream, vanilla extract, lemon juice, and mix until well combined.

  2. 6

    Add Eggs

Add the eggs one at a time, mixing well after each addition until fully incorporated.

  3. 7

    Fill the Crust

Spoon the cheesecake filling into each crust-lined muffin tin, filling each to about 3/4 full.

  4. 8

    Bake the Cheesecakes

Bake in the oven for 15-18 minutes or until the filling is set but still slightly jiggly in the center. Remove from oven and let cool.

Topping Preparation

  1. 9

    Prepare the Berries

Wash the fresh berries and pat them dry with paper towels.

  2. 10

    Add Powdered Sugar

In a small bowl, toss the berries with powdered sugar to coat them lightly.

  3. 11

    Serve

Once the cheesecakes have cooled completely, top each cheesecake with a few berries and a mint leaf if desired.
