Dough Ingredients

For Baking

Method

Prepare the Dough

  1. 1

    Make the Dough Base

In a large mixing bowl, combine the all-purpose flour and salt. Add the unsalted butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  2. 2

    Add Cheese and Spices

Stir in the grated sharp cheddar cheese, cayenne pepper, and paprika until evenly distributed.

  3. 3

    Combine Wet Ingredients

In a small bowl, whisk together the egg yolk and cold water. Gradually add this mixture to the cheese-flour mixture, mixing until a dough forms.

  4. 4

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

Shape and Bake

  1. 5

    Preheat the Oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. 6

    Roll Out the Dough

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.

  3. 7

    Cut the Straws

Using a sharp knife or pizza cutter, cut the dough into thin strips (about 1/2 inch wide).

  4. 8

    Add Toppings

Transfer the cut strips to the prepared baking sheet. Brush them lightly with a little water and sprinkle with sesame seeds, poppy seeds, and a pinch of sea salt.

  5. 9

    Bake

Bake in the preheated oven for 12-15 minutes or until golden and crispy. Remove from the oven and let cool slightly before serving.
