Preparing the Filling

    Sauté the Mushrooms

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Mushrooms

    Add the finely chopped mushrooms, salt, and black pepper to the skillet. Cook until the mushrooms are softened and all moisture has evaporated, about 5-7 minutes.

    Add Thyme

    Stir in the fresh thyme leaves and set the filling aside to cool.

    Prepare the Cheese

    Cut the Brie cheese into slices or small pieces for easy distribution in the pastry.

Assembling the En Croute

    Roll Out Puff Pastry

    On a lightly floured surface, roll out the puff pastry to a rectangle about 1/8 inch thick.

    Add the Filling

    Place the cooled mushroom mixture in the center of the pastry, spreading it out slightly. Layer the Brie cheese slices on top of the mushroom mixture.
