Cook the Rice
Add the risotto rice to the onion and garlic mixture, stirring to coat the rice. Gradually add the simmering vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed. Repeat until the rice is creamy and al dente, about 18-20 minutes. Season with salt and black pepper.

Once the risotto is cooked, remove from heat and stir in the grated Parmesan cheese and diced mozzarella. Allow the mixture to cool to room temperature.

Once the risotto has cooled, take a handful of the mixture and form it into a ball, about the size of a golf ball. Repeat until all the risotto is used.

Roll each risotto ball in flour, dip in the beaten egg, and then coat with breadcrumbs. Ensure they are fully covered.

Preheat your air fryer to 375°F (190°C) for about 5 minutes.
