Vanilla Mousse

Prepare Gelatin

In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.

Whip Cream

In a large bowl, whip heavy cream with sugar and vanilla extract until soft peaks form.

Add Gelatin

Heat the bloomed gelatin in the microwave for about 10 seconds until it dissolves, then fold it into the whipped cream.

Whip Egg Whites

In another bowl, whip the egg whites until stiff peaks form, then gently fold into the cream mixture.

Chill

Pour the mousse into serving glasses and refrigerate for at least 2 hours until set.

Chocolate Crunch

Melt Chocolate

In a microwave-safe bowl, melt dark chocolate and butter together until smooth.

Combine with Puffed Rice

Fold in puffed rice until fully coated, then spread on a parchment-lined baking sheet and let cool.

Plum Sauce

Prepare Plums

Pit and chop the plums, then combine them in a saucepan with sugar and lemon juice.

Cook Sauce

Cook over medium heat until plums break down and the sauce thickens, about 10-15 minutes. Let cool.

Assembly

Serve

To serve, layer the vanilla mousse with plum sauce and top with chocolate crunch and chopped hazelnuts.
