Preparation of Duck Hearts

    Clean and Prepare Duck Hearts

    Rinse the duck hearts under cold water and trim any excess fat. Pat dry with paper towels.

    Cook Duck Hearts

    In a skillet over medium heat, add a little oil and sauté the duck hearts for about 5-7 minutes until browned and cooked through. Sprinkle with ras el hanout, stirring to coat evenly.

Cooking Longanisa and Eggs

    Cook Longanisa

    In the same skillet, add the longanisa sausages and cook until browned and cooked through, about 8-10 minutes.

    Fry Eggs

    In a separate pan, fry the eggs sunny-side up or to your preference.

Making Yogurt Tahini Slaw

    Mix Slaw Ingredients

    In a bowl, combine the yogurt, tahini, lemon juice, shredded cabbage, grated carrot, salt, and black pepper. Mix well until combined.

Assembly

    Assemble the Dish

    On each zar'tar bun, layer cooked duck hearts, longanisa, a fried egg, and a generous scoop of yogurt tahini slaw.
