Preparation

    Prepare the Duck Hearts

    In a bowl, mix the duck hearts with olive oil, raz el hanout, and salt. Let marinate for at least 30 minutes.

    Make the Yogurt Tahini Slaw

    In a large bowl, combine the shredded cabbage, grated carrot, yogurt, tahini, lemon juice, salt, and pepper. Mix well and set aside.

    Prepare the Zar’tar Buns

    Brush the pita or flatbreads with olive oil and sprinkle with za'atar. Toast in a skillet until warm and slightly crispy.

Cooking

    Cook the Duck Hearts

    Heat a skillet over medium-high heat. Add the marinated duck hearts and cook for about 5-7 minutes, or until browned and cooked through.

    Fry the Eggs

    In another skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Assembly

    Assemble the Dish

    On each zar’tar bun, layer the cooked duck hearts, top with a fried egg, and add a generous serving of the yogurt tahini slaw. Serve immediately.
