    Prepare the Oven and Pans

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

    Mix Wet Ingredients

    In another bowl, mix sugar, oil, and eggs until well combined. Stir in grated parsnips and vanilla extract.

    Combine Mixtures

    Gradually add the dry ingredients to the wet mixture, stirring until just combined.

    Bake the Cake

    Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cake

    Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

    Cook the Squash

    In a large pot, combine the butternut squash, sugar, and lemon juice. Cook over medium heat until the squash is tender, about 20 minutes.

    Use an immersion blender to puree the mixture until smooth. Add ground ginger and cinnamon stick, and simmer for another 10 minutes.

    Remove from heat and let it cool. Store in jars in the refrigerator.

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.
