Soup Preparation

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Add Squash and Apples

    Add the diced butternut squash and apples to the pot. Stir to combine and cook for another 5 minutes.

    Add Broth and Seasonings

    Pour in the vegetable broth, and add the salt and black pepper. Bring the mixture to a boil, then lower the heat and let it simmer for about 20-25 minutes, or until the squash and apples are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. (Alternatively, you can transfer it to a blender in batches.)

    Prepare Hazelnut Dukkah

    In a small bowl, mix together ground hazelnuts, sesame seeds, cumin, coriander, and a pinch of salt.

    Serve

    Ladle the soup into bowls, sprinkle with hazelnut dukkah, and garnish with fresh mint leaves. Serve warm.
