    Prepare the Red Chile Sauce

    Remove the stems and seeds from the dried red chilies. Soak the chilies in hot water for about 15-20 minutes until softened. Blend the soaked chilies with 1 cup of the soaking water until smooth, then set aside.

    Cook the Pork

    In a large pot, add the pork shoulder, chopped onion, minced garlic, cumin, oregano, salt, and pepper. Add enough water to cover the pork. Bring to a boil, then reduce heat and let simmer for about 1.5 to 2 hours, or until the pork is tender.

    Combine Ingredients

    Once the pork is tender, remove it from the pot and shred it using two forks. Return the shredded pork to the pot, along with the blended red chile sauce and hominy. Stir well to combine.

    Final Simmer

    Allow the posole to simmer for an additional 30 minutes, stirring occasionally. Adjust salt and pepper to taste.

    Serve

    Ladle the posole into bowls and serve with lime wedges and fresh oregano on the side.
