Prepare the filling
In a bowl, combine the shredded chicken or beef, green chile, diced tomatoes, salt, and black pepper. Mix well.

Assemble the quesadillas
Lay one flour tortilla on a flat surface. Sprinkle half of the Monterey Jack and cheddar cheese on one half of the tortilla. Add a portion of the filling mixture on top of the cheese, then top with the remaining cheese. Fold the tortilla in half.

Cook the quesadillas
In a skillet, heat 1 tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

Serve
Slice the cooked quesadillas into wedges and serve hot with sour cream, guacamole, and salsa on the side.
