    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the russet potatoes thoroughly, then pierce them a few times with a fork. Bake them in the preheated oven for about 45-60 minutes, or until tender.

    Scoop Out the Flesh

    Once the potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out the flesh, leaving about 1/4 inch of potato around the skin.

    Season and Oil the Skins

    Brush the potato skins with olive oil, then season with salt and black pepper on both sides.

    Bake the Skins

    Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until they are crispy.

    Add Toppings

    Remove the skins from the oven, sprinkle the shredded cheddar cheese and crumbled bacon into each skin, then return to the oven for another 5 minutes, or until the cheese is melted.

    Garnish and Serve

    Remove from the oven, top with chopped green onions, and serve hot with a side of sour cream for dipping.
