Prepare the Chicken Mixture
In a large bowl, combine the diced chicken, diced jalapenos, and shredded jack and cheddar cheese. Mix well to ensure even distribution.

Bread the Chicken
Take small portions of the chicken mixture and form them into bite-sized balls. Dip each ball in the flour, then the egg, and finally coat it with breadcrumbs. Repeat until all the mixture is used.

Heat the Oil
In a deep frying pan or pot, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

Fry the Bites
Carefully add the breaded chicken bites to the hot oil in batches, frying until golden brown and cooked through, about 4-5 minutes per batch. Use a slotted spoon to remove them and drain on paper towels.

Arrange the fried chicken bites on a serving platter and serve hot with ranch dressing on the side for dipping.
