Prepare the Filling
In a mixing bowl, combine shredded jack cheese, shredded cheddar cheese, diced cooked chicken, diced green chile, salt, and pepper. Mix until well combined.

Assemble the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper. Moisten the edges with water, fold the wrapper over to create a triangle, and press to seal. Repeat with remaining wrappers and filling.

Heat the Oil
In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

Fry the Wontons
Carefully add the wontons to the hot oil in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes or until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Serve hot with your favorite dipping sauce.
