Cooking Instructions

  1. 1

    Prepare the Pork

In a large pot or Dutch oven, heat olive oil over medium heat. Add the cubed pork shoulder and brown on all sides.

  2. 2

    Sauté Vegetables

Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onions become translucent.

  3. 3

    Add Ingredients

Stir in the diced potatoes, green chile, cumin, oregano, and season with salt and pepper. Mix well.

  4. 4

    Simmer the Stew

Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the pork is tender.

  5. 5

    Final Adjustments

Taste the stew and adjust seasoning if necessary. If the stew is too thick, add a bit more broth or water.

  6. 6

    Serve

Serve hot with warm tortillas on the side.
