Green Chile Pork Flautas Recipe

Preparation

    Cook the Pork

    In a large pot, add the pork shoulder and cover it with water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours or until the pork is tender. Remove from pot and shred the pork using two forks.

    Mix Filling

    In a large bowl, combine the shredded pork, green chiles, diced onion, salt, and pepper. Mix well and set aside.

    Prepare Tortillas

    In a skillet, heat a small amount of oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until pliable. Remove and drain on paper towels.

    Assemble Flautas

    Place about 2 tablespoons of the pork filling on one end of each tortilla. Roll tightly and secure with a toothpick if necessary.

    Fry Flautas

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the rolled flautas in batches until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.

    Serve

    Serve the flautas hot with sour cream and salsa on the side.
