Prepare the Chicken
Preheat the grill or charbroiler to medium-high heat. Brush the chicken breasts with olive oil and season with salt and black pepper.

Grill the Chicken
Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Add Green Chiles and Cheese
In the last minute of cooking, top each chicken breast with diced green chiles and a slice of pepper-jack cheese. Close the grill lid to melt the cheese.

Assemble the Sandwich
Remove the chicken from the grill and let rest for a couple of minutes. Place each chicken breast on a sesame seed bun, top with lettuce and tomato slices, and add the top bun.

Serve the Green Chile Chicken sandwiches immediately while hot.
