    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips to make fries. Rinse in cold water to remove excess starch, then pat dry with a towel.

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and has no lumps.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 180°C (350°F). You can test the oil by dropping in a small amount of batter; it should sizzle and rise to the surface.

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt.

    Fry the Fish

    Dunk the white fish fillets into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil. Fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Serve the crispy fish and chips hot with tartar sauce on the side.
