Prepare the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Form the Patties
In a bowl, season the ground beef with salt and black pepper. Divide into two equal portions and form into burger patties.

Cook the Burgers
In the same skillet, cook the burger patties on medium-high heat for about 4-5 minutes on each side or until desired doneness.

Add Cheese and Green Chile
During the last minute of cooking, place slices of cheddar and pepper-jack cheese on each patty, along with green chile. Cover the skillet to melt the cheese.

Toast the Texas Toast
While the cheese is melting, toast the Texas toast in a toaster or on a grill until golden brown.

Assemble the Burger
Spread spicy mustard on one side of the toasted Texas toast. Place the cheese-topped burger patty on top, followed by two slices of crispy bacon. Top with the second slice of toasted Texas toast.

Serve
Cut the burger in half if desired and serve immediately.
