Preparing Ladyfinger Cookies

Make the Ladyfinger Cookies
Preheat the oven to 350°F (175°C). In a bowl, whisk together the eggs and sugar until pale and fluffy. Stir in the vanilla extract. Sift the flour and baking powder into the egg mixture and fold gently until combined. Pipe the batter onto a lined baking sheet in finger shapes. Bake for 10-12 minutes until golden. Let cool.
Assembling Tiramisu

Prepare the Filling
In a bowl, beat the mascarpone cheese and sugar until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.

Layer the Tiramisu
Dip each ladyfinger into the zendo espresso briefly and layer them in a dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining filling. Smooth the top.

Chill and Serve
Cover and refrigerate the tiramisu for at least 4 hours or overnight. Before serving, dust with cocoa powder and sprinkle shaved dark chocolate on top.
