Cannoli Shells

Method

Cannoli Filling

  1. 1

    Prepare the Shells

In a mixing bowl, combine flour, sugar, cocoa powder, and salt. Make a well in the center and add the egg yolks, white wine or vinegar, and melted butter. Mix until the dough comes together, then knead on a floured surface until smooth. Wrap in plastic wrap and let rest for 30 minutes.

  2. 2

    Roll and Cut the Dough

Roll out the dough to about 1/8 inch thickness. Cut into 4-inch circles using a cookie cutter. Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

  3. 3

    Fry the Shells

Heat the vegetable oil in a deep frying pan over medium heat. Fry the wrapped dough until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.

  4. 4

    Prepare the Filling

In a mixing bowl, mix together ricotta cheese, powdered sugar, vanilla extract, and chocolate chips until smooth and well combined.

  5. 5

    Fill the Shells

Using a piping bag, fill the cooled cannoli shells with the ricotta filling. Dust with powdered sugar before serving.
