    Make the Tomato Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in crushed tomatoes, salt, black pepper, oregano, and basil. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.

    Cook the Sausage

    In a skillet over medium-high heat, cook the Tully's sweet fennel sausage until browned, about 5-7 minutes. Remove from heat and slice into rounds.

    Roast the Onion

    Preheat the oven to 400°F (200°C). Toss sliced red onion with a bit of olive oil, salt, and pepper. Roast in the oven for 20 minutes or until caramelized.

Assembly

    Combine Ingredients

    In a baking dish, spread a layer of the tomato sauce on the bottom. Layer sliced sausage on top, followed by roasted red onion, mozzarella, and provolone. Pour the remaining sauce over the top.

    Bake

    Preheat the oven to 375°F (190°C). Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden.

    Garnish and Serve

    Once baked, remove from the oven and sprinkle with chopped Italian parsley and grated Grana Padano. Let cool for a few minutes before serving.
