    Prepare the Pork Shoulder

    In a large pot, heat the olive oil over low heat. Season the pork shoulder with salt and black pepper, then add it to the pot. Cook slowly for about 6 hours, turning occasionally, until the meat is tender and easily shredded.

    Pickle the Onions

    While the pork is cooking, thinly slice the red onion. In a bowl, combine the red wine vinegar and a pinch of salt. Add the sliced onions to the vinegar mixture and let them marinate for at least 1 hour.

    Assemble the Sandwich

    Once the pork is done, shred it using two forks. Slice the ciabatta rolls in half and spread a layer of coarse grain mustard on both sides. Add a generous amount of shredded pork, top with pickled onions, and finish with fresh arugula.
