Preparing the Base
In a medium saucepan, combine the whole milk, heavy cream, and sugar over medium heat. Stir continuously until the sugar is fully dissolved and the mixture is warm but not boiling.

Cooking the Mixture
Pour the combined mixture back into the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 10 minutes). Do not let it boil.

Cooling and Flavoring
Remove from heat and stir in the vanilla extract. Allow the mixture to cool completely, then refrigerate for at least 4 hours or overnight.

Churning the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freezing
Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
